Meyer Lemon Chicken Vegetable Orzo Soup

This is a very flavorful soup that is delicious any time of year. I always make a full pot and freeze as individual serving

Meyer Lemon Chicken Vegetable Orzo Soup (Crockpot Version)

Ingredients:

  • 8 ounce uncooked orzo pasta

  • 6 carrots, sliced

  • 1 large onion, diced

  • 6 stalks celery, sliced

  • 6 cloves garlic, minced

  • 2 beef bouillon cubes

  • 2 teaspoons onion powder

  • 1/2 teaspoon smoked paprika

  • 1 teaspoon ground black pepper

  • 1 tablespoon Worcestershire sauce

  • ½ teaspoon Kosher salt

  • 8 cups vegetable broth

  • 1 pound raw chicken tenders, with tendons pulled

  • 1 cup sweet corn, frozen

  • 1 cup petite sweet peas, frozen

  • 1 10-ounce bag baby spinach

  • 1/2 cup Meyer lemon juice

Directions:

  1. In a large crockpot place all ingredients except orzo pasta, corn, peas, spinach and lemon juice.

  2. Cool on high for 4 hours. Remove chicken tenders and shred meat. Place back in crockpot.

  3. Add remaining ingredients and cook on low for 2 hours.
