Lemon Spice Diamonds

Stay Home and BAKE!

Like everyone else, I’m at home, baking and doing some spring cleaning which includes my office files.  I found this recipe in a folder that I saved from either my grandmother or Aunt Selma. It was from the Better Homes and Gardens Test Kitchen and called out California Walnuts (which I have) and lemons (which I also have), so of course I had to make!

Lemon Spice Diamonds

Ingredients:

3/4 cup shortening

1 1/3 cups brown sugar

1/2 teaspoon vanilla

2 eggs

1/2 teaspoon shredded lemon peel

2 tablespoons lemon juice

1 cup sifted all-purpose flour

1 teaspoon baking powder

1/4 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1 cup quick-cooking rolled oats, uncooked

1 cup California walnuts, chopped

Directions:

  1. In mixing bowl, cream shortening, brown sugar, and vanilla till light and fluffy. Add eggs, lemon peel, and juice; beat well.

  2. Sift together flour, baking powder, and spices; add to creamed mixture. Stir in rolled oats and nuts.

  3. Spread in greased 13x9x2-inch baking pan.

  4. Bake in moderate oven (350 degrees F) 20 to 25 minutes.

  5. While warm, top with Lemon Glaze: combine 1 1/2 cups sifted confectioners' sugar, 1 tablespoon lemon juice and enough m to make of glaze consistency.

  6. Cool; cut in diamonds.
