Honey Walnut Pear Salad

If you’re like me, you may be looking for a lighter meals after several days of heavier holiday entrees. This winter salad featuring walnuts, cranberries, pears, avocado and spring mix is just what you want now.

Honey Walnut Pear Salad

2 servings

Ingredients:

Salad:

  • 6 ounces Fresh Express® 5 Lettuce Mix or other favorite greens

  • 1/2 cup dried cranberries

  • 1 avocado, sliced

  • 1/2 cup walnut pieces

  • 1 D ’Anjou pear, sliced

  • 1/4 cup Queso Fresco crumbles

Dressing:

  • 1 cup walnuts

  • 2 tablespoons honey

  • 3 garlic cloves

  • 1 cup extra virgin olive oil

  • 1/2 cup red wine vinegar

  • salt to taste

Directions:

  1. Preheat oven to 350°F. Arrange walnuts for salad and dressing on a cookie sheet in a single layer. Bake 8 to 10 minutes, checking frequently. Remove from pan to cool.

  2. Arrange lettuce in a large serving bowl. Top with cranberries, avocado, pear, ½ cup walnuts and crumbles.

  3. In a blender or food processor add the “dressing” walnuts, honey, garlic cloves, olive oil, vinegar and salt to taste. Blend until smooth and creamy.

  4. When ready to serve, either pour dressing over salad and toss (don’t forget to take a picture first!) or serve in a separate bowl so guest can drizzle dressing as they would like.
