Simple Fire-Roasted Corn Salsa

Makes 5 cups

Ingredients:

  • 2  (12-ounce) packages fire-roasted frozen super sweet corn kernels 

  • 1/2 cup chopped red onion 

  • 1 jalapeno pepper, seeded and finely minced 

  • 1 poblano pepper, seeded and finely minced

  • 1 bunch fresh cilantro, minced

  • 4 Roma tomatoes, chopped 

  • 1/4 cup lime juice

  • 1 teaspoon salt 

  • 1 teaspoon ground black pepper

Directions:

  1. In a large bowl combine all ingredients. Cover and refrigerate for at least an hour.

  2. Serve as a salsa with chips, as a side salad or garnish on chicken or pork.
