Simple Fire-Roasted Corn Salsa
Makes 5 cups
Ingredients:
2 (12-ounce) packages fire-roasted frozen super sweet corn kernels
1/2 cup chopped red onion
1 jalapeno pepper, seeded and finely minced
1 poblano pepper, seeded and finely minced
1 bunch fresh cilantro, minced
4 Roma tomatoes, chopped
1/4 cup lime juice
1 teaspoon salt
1 teaspoon ground black pepper
Directions:
In a large bowl combine all ingredients. Cover and refrigerate for at least an hour.
Serve as a salsa with chips, as a side salad or garnish on chicken or pork.
