Walnut Crusted Salmon
If you want to get a double dose of heart-healthy omega 3s, try this simple and tasty walnut crusted salmon. You’ll get ALA from the walnuts and EPA and DHA from the salmon. A win-win!
Ingredients:
- 4 salmon fillets, (4 oz, each) 
- 1 cup walnuts, finely chopped 
- 1/4 cup whole wheat breadcrumbs 
- 2 tablespoons Dijon mustard 
- 1 tablespoon honey 
- 1 tablespoon olive oil 
- 1 teaspoon lemon zest 
- Salt and pepper to taste 
- Lemon wedges for serving 
Directions:
- Preheat oven to 400°F. Line a baking sheet with parchment paper. 
- In a bowl, combine finely chopped walnuts and whole wheat breadcrumbs. Add a pinch of salt and pepper and mix well. 
- In a separate small bowl, whisk together Dijon mustard, honey, olive oil, and lemon zest. 
- Place the salmon fillets on the prepared baking sheet. Brush each fillet with the Dijon mustard mixture, ensuring they are well coated. 
- Press the walnut and breadcrumb mixture onto the top of each salmon fillet, creating a crust. 
- Bake in the preheated oven for about 12-15 minutes or until the salmon is cooked through and the crust is golden brown. 
- Remove from the oven and let it rest for a couple of minutes. 
- Serve the walnut-crusted salmon with lemon wedges on the side.
