Chocolate Covered Walnut Stuffed Dates

These imitation “SNICKERS®” bites taste just like the real thing. They are so easy to make and are a perfect snack or after-dinner sweet. This version offers fiber from the dates, omega 3s from the walnuts, protein from the peanut butter and flavanols from the dark chocolate. A healthy and delicious treat!

Ingredients:

5 Medjool dates

1/3 cup crunchy peanut butter

5 walnut halves, cut in half

½ cup dark chocolate chips

1 tablespoon unsweetened shredded coconut, finely chopped


Directions:

  1. Cut each date in half and remove the pit. 

  2. Using a teaspoon, fill the date half with peanut butter.

  3. Place walnut on top of peanut butter.

  4. Heat chocolate chips in a small microwave safe bowl…30 – 60 seconds on high. Stir until fully melted. 

  5. Drop a stuffed date into chocolate and roll around until fully coated. Place on baking sheet lined with wax paper. 

  6. Sprinkle with coconut and place in refrigerator or freezer until chocolate has hardened. Store in an airtight container.
